Plain ascorbic acid is an acid, and at the doses people actually take it, the stomach tends to notice. Buffering is the answer to that: the ascorbate is combined with mineral carbonates — calcium, magnesium, potassium — which neutralize the acidity while leaving the vitamin C intact.
What you get is a nearly pH-neutral powder, considerably gentler than the straight acid, with the buffering minerals arriving alongside as a small bonus rather than a filler.
Like the rest of the Ecological Formulas vitamin C line, this is derived from tapioca rather than corn. Most of the world's ascorbic acid is fermented from corn, and for a certain number of people that residue — not the vitamin C itself — is precisely what they react to. This exists for them.
