Lysine is one of the nine amino acids the human body cannot build. It must come from food, and it is the one most often in short supply in grain-based diets — cereal proteins are notoriously low in it, which is why nutritionists call lysine the limiting amino acid of wheat, rice, and maize. Legumes have it; grains largely do not. The old peasant pairing of beans and rice is, in effect, a lysine correction.
Structurally it carries a long positively charged side chain, which makes it a favored site for the cross-links that hold collagen together. Lysine residues are hydroxylated and then bonded to one another, and the resulting lattice is what gives skin, tendon, and bone matrix their tensile strength. Vitamin C is required for that hydroxylation, which is why the two are so often taken together.
Lysine is also the precursor from which carnitine is synthesized, and it participates in normal calcium absorption.
